I think that to save your data that you would be better off to purchase a USB 2.5" HDD enclosure to install the HDD into and connect it to a laptop or a pc to recover the data. Recovering the programs will not work this way as they are "installed" in the OS.
Changing the HDD with the OS installed from one laptop to another would probably cause Windows "activation" problems, and all that entails, as it is now tied into a new motherboard, which makes Windows think that it is a new pc, (which it is, well different anyway) and the licence (probably an OEM) specifies only on one pc.
