When I use my PS Vita it'll freeze and shut itself off saying the memory card was removed and restart itself. Some times I have to restart it multiple times for everything to be restored.

What is your memory card information?
Did you use any adapter or etc to convert your memory card? like sd card to vita memory card?
try testing with another memory card and observe the results.
sometimes the memory card can either fail or corrupted.
if it is still under warranty, you can send it for a check or replacement.
another possibility if memory card has been removed from the vita, internal memory reader pins might be loosen, cold solders… etc which might need to either replaced or calibrated.
