Touch the "Menu" field, it is slightly darker. The settings menu for language, water hardness, etc. appears. But that's not the service menu yet.

Touch the first (espresso) and last (hot water) fields in the selection at the same time. The fields are dark.

Wait until the selection fields are brightly lit. The service menu appears.
