@timings - Take a look at Step 4 the Red chips are the flash chips that hold the data MacBook Pro 13" Touch Bar 2017 Teardown.
Sadly, there is no means to remove the flash chips (the storage side of what an SSD would have). But there is a way to access the data! But you need a special tool that an Apple Store should have, but as the call for it as died many got rid of the tool. Some independents have them. Here on the logic board just on the other side (left in the picture is a long silver connector. This is the Lifeboat connector which allows access via a cable to a second MacBook to salvage the data if it’s not encrypted. If it is, the data can be wiped.
