Is it possible to replace the Original M.2 OWC SSD with am 512 GB M.2 SSD of an another manufacturer?

The SSD Apple uses in their systems is a custom OEM unit it is not manufactured by OWC.

If your question is can I upgrade my current SSD with a 3rd party unit.

Sadly, there is not units presently available for the MacBook Air 11" '14 model. Here is one source of 3rd party SSD units. I would keep a watch on them Transcend - JetDrive.
