Should I look into replacing the cellular antenna flex cable? Or is this more likely something more to do with the charging flex cable (which I have replaced once)? Or something different entirely?

If you have previously replaced the charging port flex cable, That might be my first thought since replacement charge ports are notoriously shoddy, and I believe there are some cellular antenna or communication based signals which run through it, so it could certainly be to blame.

@Mateo Wang That's actually a stellar question. Unfortunately I don't have a great answer for you. It can be tricky to test that sort of thing. You can try just disconnecting that cable from the board and see if your signal strength changes when you boot it up again.
Depending on the fault that could help. I might also just have a look. Your eyes are pretty good tools.
That antenna cable that's there, may also be at fault. Generally speaking I think that's for WiFi, not cellular signal, but reseating that too is probably also worth a go. It plugs into such a tiny point on the charge port flex, it would be easy to have come loose if it wasn't probably connected to begin with.
