Pixel 5 screen not staying flat, replacement adhesive not saying

You seem to be in an odd situation. Usually when the screen bulges in the middle it's because it's being pushed out by a swollen battery. I'm going to assume that's not the case since you've obviously had the phone opened already (twice) and it should have been apparent if that was the case.

So the only other thing that comes to mind is the possibility that the frame may be bent. Why did you replace the screen in the first place? Was it due to damage from being stepped on or dropped? If so, the best thing to do at this point is to remove the screen again and check the edges with a straight-edge. If you find any gap between the straight edge and the frame you'll need to try and straighten it to where it's perfectly flat in order to be able to correctly mount the screen and have it stay put.

It would be extremely unlikely, but if you don't find any bend in the phone itself, then check the replacement screen for flatness as well. In the off chance you find that it's not flat, don't try to straighten it; chances are you'll break the screen. Rather, you should return the screen for a replacement if that's what the problem is.

Just to add to my previous comments, I've had a bit of similar experience. My daughter-in-law was given an iPad mini with a broken screen as a result of the frame being bent. I took the damaged screen off then went about trying to determine if the frame could be straightened out or if I was going to need to replace the entire midframe.

As it turned out, I was able to get it flattened out to where it was perfectly straight, and the replacement screen then fit on it exactly the way it should.

So what I'm saying is that in your case the screen and case should fit together exactly flat with no gaps without adhesive, so that may be a way you can tell where the issue is by prefitting it without the glue. Gently bend it straight as needed then refit it until you get a perfect fit. To be absolutely safe it would be best to remove the motherboard so you don't strain any of the solder joints on it, but if there's a very minimal amount of bending needed you will probably be okay with not taking it out.
