This is a rather common issue in the iPhone 11 specifically. There is an entire page dedicated to these sort of kernel panics, but I'll cut to the chase.

Your iPhone is expecting a check in from a sensor and because it's not getting the expected data, it reboots. The sesnor referenced in your log is "mic2" which is the rear microphone. In the iPhone 11 this can be found on the power button flex cable. This cable also contains the camera flash.

It's best to replace this with an authentic Apple cable (there are places that sell cables pulled from good phones), or part from a reputable seller. There are many of these parts on the market that will continue to produce this issue, even after they are replaced.
