if the screen on a TI-84 plus CE is cracked or in some other way damaged, would there be a way to remove and replace it without damaging other parts? or really any way to remove it at all?

Yes it can be removed. Refer to step 5 of the teardown guide: TI-84 Plus CE Teardown
The problem is finding a replacement screen. TI does not sell replacements so you'll have to buy a donor calculator to get a screen from.
